00Beetroot and Tomato SoupThis is a very forgiving recipe. The principle ingredients are Beetroot and Tomatoes, but then I added a red pepper, some wonky carrots and brussel sprouts that needed using up (No, you don't see or taste them once they are blended), along with Spinach and Chives, and it made 4 bowls plus 8 for the freezer! It's speedy, fresh, and full of nutrients. I'm sure you and your family will enjoy this recipe as much as mine did. Whilst I've done this in the Ninja Foodi, it's just as easy to do on the stove or in the Slow cooker. I used fresh beetroot that I had previously pressure cooked - you can find the instructions for this on the website. It's easy to adapt this recipe to suit your own tastes. 00Pressure cooked BeetrootThis is more of a "how to" than an actual recipe but it's worth knowing nonetheless. Prep work is important, as it saves time in the long run, saves waste and helps you plan meals more efficiently. Especially when you buy a load of reduced veggies or have a glut of some things that, on their own don't make a meal, but if prepped and stored correctly can be as important as the main ingredients of a meal. Vegetables are the backbone of our meals and are easy to prep and store, or freeze for another day. Beetroot is one of those that I love to prep in advance. I can then add it to soup, salad or various other dishes. I pressure cooked mine in the Ninja Foodi, but you could cook it in the Slow cooker or on the hob instead. 00Turkey Breast SatayTurkey meat is relatively cheap to buy, which makes it a good alternative to more expensive cuts of chicken or beef. Its healthier too as it's low in fat, cooks quickly and is a great midweek addition to your meal plans. This curry is full flavoured but mild enough for the children, so all the family can enjoy it. I've used the Ninja Foodi to Air fry the meat, then sautéed it with the sauce, but you could just as easily do this in a pot on the stove. It's easy to adapt to you and your families tastes and is a great way to add or hide more vegetables if you prefer- I added some grated courgette as it needed using up and it blended into the sauce without anyone noticing it was there- win win! I use Mayflower Curry Powder as it has all the spices I need in 1 box, so I used it for the marinade and the sauce, along with the peanut butter and sweet chilli sauce, keeping it nice and simple 😋 Why not give this a try and let us know how you get on in the comments below. 00Keralan Turkey mince CurryTurkey mince is economical, low in fat, and very versatile. You can use it to make burgers, bolognese, cottage pie, etc, but I decided to use it to make a creamy curry. This healthy curry is quick to make (under 40 minutes) and great for busy weeknights when you don't have much time to cook! Its packed with lots of vegetables, and is mild too, making it the perfect recipe for introducing small children to spices. I used frozen mixed vegetables (carrot, cauliflower, broccoli) as this cuts the cooking time down, and added some that needed to be used up from the fridge too( pepper, leek,spinach) but you can use any vegetables you prefer. I also used the Ninja Foodi on Sear/Saute but this can easily be done in a pan on the stove too. Why not give this a try and let us know how you get on in the comments below. 00Pan-Seared Lamb Steaks.A leg of Lamb can be pricey, so unless it's a special occasion, I tend to buy boneless steaks instead. These are easier to cook, and make a speedy midweek meal, or with the addition of extra vegetables etc they can be turned into a Sunday dinner. I've kept it simple by pan frying, then serving with redcurrent gravy, a baked potato and some garlic buttered spinach and garden peas 😋 As always you can substitute these by adding your own sides and any sauce you prefer. 00Slow Cooked Wholemeal loafI usually use a packet mix when bakng wholemeal bread but thought I'd give it a try using some of the tips I've learned from our lovely fb followers. A Slow Cooker is not the first thing that springs to mind when you are going to bake bread, but I seem to have more success when using my SC as opposed to the oven, and find it's a softer bake too.
