Banana and chocolate chip loaf with pineapple glaze

A great way to use those overripe bananas

Yields1 Serving
 140g softened butter
 140g caster sugar
 2 beaten eggs
 140g self raising flour
 1 tspn baking powder
 2 very ripe mashed bananas
 A handful of chocolate chips or broken chocolate
 50g icing sugar
 2-3 tspns pineapple juice or water to mix

Heat oven to 180C

Grease and line a 2lb loaf tin , or use a liner

Cream the butter and sugar in a large bowl until light and fluffy

Slowly add in the eggs and a little flour

Fold in the rest of the flour and baking powder

Now fold in the bananas and chocolate

Pour into the prepared tin

Bake for about 30 minutes or until a skewer comes out clean

Cool in the tin for about 10minutes then put onto a wire rack

Mix the icing sugar with 2-3 tspns of pineapple juice or water, you want a runny icing

Make holes in top of cake with a skewer

Drizzle the icing over the cake
