- 3 sheets of filo pastry halved
- 3 eggs
- Dash of cream or milk
- 1 heaped tspn Dijon mustard
- 3 rashers bacon cooked and chopped
- 3oz grated strong cheddar -add more if you like it cheeset
- 1/2 a chopped onion
- Salt and pepper
- Melted butter
Heat oven to 200c. Grease a pie dish .
Cook down the onion in a little butter
Whisk the eggs. Add in the cream or milk , mustard and seasoning.
Layer up the filo sheets , brushing with melted butter between each one .
Sprinkle the cheese on top . Then add the onions . Pour over the egg mix . Then sprinkle over the bacon .
Put in the oven , after about 10 minutes. Turn the oven to 170c and cook until the egg is set ( about 15-20 minutes .
Remove from oven and leave for about 5 minutes before cutting
