Homemade spaghetti in tomato sauce

Yields1 Serving
 500g pasta
 1 diced red pepper
 4 plum tomatoes or a tin of tomatoes
 1 onion finely diced
 2 garlic cloves grated
 1 tspn sugar or sweetener
 Salt and white pepper
 0.5-1 tblspn tomato purée

Boil the pasta in a large pan of boiling salted water . Drain and put to one side

Put the remaining ingredients in a saucepan .

Bring the ingredients to a boil, simmer for about 8-10 minutes with the lid on

Check seasoning .

Blitz it all until smooth and stir in the pasta . Check seasoning again and serve .

Break up spaghetti int boys about an inch long before cooking . You can use any pasta shapes . You may need to add a little water to loosen the sauce
