Orzo Salad

Ingredients

  • 300-400g orzo
  • 4 good handfuls of chopped kale ( stalks removed¬£
  • 1tspn oil
  • 1-2 tins chickpeas
  • 1 small red onion finely chopped
  • Crumbled feta - up to a packet
  • Juice and zest of a lemon
  • 2 tblspn white balsamic vinegar ( or white wine vinegar )
  • 1tspn cumin
  • Salt and black pepper
  • 120ml olive oil

Method

Step 1

Cook the orzo but don't overcook it follow packet guidelines

Step 2

Put the chopped onion in a large bowl

Step 3

In a smaller bowl whisk together the lemon juice , zest , cumin , vinegar and salt and pepper gradually whisk in the oil. . Set aside

Step 4

Drain and rinse the chickpeas ( pat dry with kitchen towel .

Step 5

Heat the tspn of oil in a pan and stir fry the kale until it just starts to wilt ( a couple of minutes )

Step 6

Drain the orzo , cool slightly. Now add the kale and orzo to the onions , add the chickpeas and mix well . Gradually add the dressing and mix well to ensure it's all coated .

Step 7

Crumble over the feta and serve
