- 100-150g pasta (any shape) person
- 1-2 handfuls of veg per person ( carrot , peppers , red onions , , asparagus , green beans , mushrooms tomatoes
- Salt and black pepper
- 2 tblspns olive oil
- Zest of 1 lemon
- Fresh herbs ( I used thyme )
- Grated Italian hard cheese
Put the oil in a large bowl . Add the veg , season , add the lemon zest and herbs . Toss well , cover and leave for a couple of hours .
Heat oven to 190C , tip the vegetable mix into a baking tin and cook for 15 minutes
Meanwhile bring a large pan of salted water to the boil and cook the pasta .
Drain the pasta but save sme of the liquid . Tip the cooked vegetables and oil into the pasta , squished up some of the tomatoes , add some of the cooking water and stir well .
Serve with a little grated cheese on top and garlic bread
