Pasta Primavera

Ingredients

  • 100-150g pasta (any shape) person
  • 1-2 handfuls of veg per person ( carrot , peppers , red onions , , asparagus , green beans , mushrooms tomatoes
  • Salt and black pepper
  • 2 tblspns olive oil
  • Zest of 1 lemon
  • Fresh herbs ( I used thyme )
  • Grated Italian hard cheese

Method

Step 1

Put the oil in a large bowl . Add the veg , season , add the lemon zest and herbs . Toss well , cover and leave for a couple of hours .

Step 2

Heat oven to 190C , tip the vegetable mix into a baking tin and cook for 15 minutes

Step 3

Meanwhile bring a large pan of salted water to the boil and cook the pasta .

Step 4

Drain the pasta but save sme of the liquid . Tip the cooked vegetables and oil into the pasta , squished up some of the tomatoes , add some of the cooking water and stir well .

Step 5

Serve with a little grated cheese on top and garlic bread
