Sausage and Potato Casserole

Cook Time1 hr 25 mins
 4 large potatoes
 4 carrots
 8 sausages
 2 tbspn olive oil
 1 onion chopped
 1 pepper chopped
 1 garlic clove grated
 1 tspn paprika-smoked
 1 tblspn tomato purée
 Tin of chopped tomatoes
 400ml vegetable stock
 A couple of bay leaves
 Fresh thyme to garnish

Heat oven to 180c

Peel the potatoes and ca cut them into quarters.

Peel the carrots and cut each carrot into about 4 pieces

Heat the olive oil in a casserole dish or pan and fry the sausages, turning often, until lightly golden

Remove the sausages from the pan and put them on a plate.

Add the chopped onion to the pot and cook over a low heat for 5-10 minutes, until the onion is slightly softened

Add the garlic , tomato purée and paprika and cook for another minute.

Add the chopped potatoes , peppers and carrots and stir everything around in the pan so that the vegetables are coated with the oil.

Add the tomatoes and stock and the bay leaves

Bring to a simmer

Put the sausages back into the mix

Put into the oven and cook for about 45-50 minutes
