00Garlic Butter SpaghettiNormally, we focus on meals for families, but occasionally, we get asked for meals to suit 1 person. This is my favourite 1 portion meal that is ready in under 15 minutes, and can be as simple or as complex as you want. It can be adjusted to feed as many as you wish and adapted to use whatever you have in the fridge at the time. My favourite optional extra is King Prawns if I get them reduced. Eve x
00Treacle SconesMemories of my Nanna and Mum making these on a Sunday morning for a wee treat through the week. The hint of sweetness from the treacle meets the spice from the cinnamon and melts on your tongue for a touch of nostalgia. 00Slow Cooked Minted Lamb ShanksLamb shanks can be tough, so cooking low and slow is the answer if you want soft succulent meat. Using the Slow Cooker is one of the best and easiest ways to ensure it's melt in the mouth tender. Seared first to seal in all the flavour, rubbed with your favourite marinade- mint in this case and then slow cooked for 4-6hrs. You could also do this in the oven, but the SC is much more economical. I've made my mint sauce.... (Recipe at the bottom of the page) but you can use a jar. 00Warm Noodle Salad with a Sweet Chilli DressingFresh Egg Noodles are great if you want a quick and easy lunch or dinner. They are the Asian equivalent of pasta so only require a few minutes cooking. The long flat strands of the noodles hold on to a sauce really well, and by adding a few extra ingredients you have a filling meal in no time. I added some vegetables, some cooked meat (ham and chorizo) that needed using up, and some Sweet Chilli sauce (recipe on the website) and had a filling meal in under 10 minutes. This can easily be adapted by changing the vegetables, or the meat and using a shop bought sauce. This feeds 2 but can feed 4 by doubling up the ingredients. 00Tagliatelle with Sweet Chilli Steak RaguSteak ragu? I hear you ask. We all deserve a treat now and then and this dish is mine. Beef steak simmered in a rich tomato sauce till its melt in the mouth tender. I've cooked this on the stove but it can also be done in the Slow cooker.
