Baked Beans

Yields1 Serving
 400g dry haricot beans ( you could use cannelloni)
 2-3 tbspn extra virgin olive oil
 2 finely chopped red onions
 150g finely chopped streaky bacon ( pancetta if wanting to push the boat out )
 2 finely chopped garlic cloves
 1 tin of chopped tomatoes
 2 tbspn muscavado sugar
 3 tblspns cider vinegar ( use White wine or red wine vinegar if that's all you have )

Soak the beans overnight in cold water

Drain then cover with water in a pan . Bring it to the boil . Cook for a further 45 minutes- 1 hour.

Leave aside for 30 minutes

Drain well

Heat the oil in a large frying pan add the onions and bacon and fry for about 8 minutes

Add in the garlic, tomatoes , sugar , vinegar and 400ml of water

Add the beans , stir . Cook for another 1.5- 2 hours . Stir occasionally

When you have a nice thick sauce and tender beans they're ready
