another way to use up your leftover roast beef


1/2 green pepper

1/2 red pepper

1 medium onion

A handful of mushrooms

A few slices of leftover roast beef

Fajita seasoning to taste



1Slice the peppers, onions and mushrooms

2Cut the beef into strips

3Heat a little oil in a frying pan or wok

4Add in the onions , fry for 2 minutes more ping them moving

5Add in the peppers and fry for about 3 minutes again keeping them moving

6Add in the mushrooms and a tablespoon of seasoning.

7Add a dash of water

8Now add in the beef and more seasoning

9Keep the ingredients moving ,

10When the meat is heated through serve on warm tortillas . I serve with a salsa , some savory rice and grated cheese . Guacamole and sour cream are traditionally served too
