Chicken Tarragon

Use in a pie ,a pasta bake or to top pasta

  • Yields: 4 servings

Ingredients

Leftover roast chicken or 2 poached chicken breasts

A finely sliced onion

6 chopped mushrooms

2tblspn magic mix ( recipe on website )

500-800ml chicken stock

A splash of oil

1-2 tspn dried tarragon

1 tspn mustard

FOR A PIE

1 sheet puff pastry

Egg to glaze

FOR A PASTA BAKE

100g pasta per person

1 ball of mozerella torn

FOR A PASTA DISH

100g pasta per person

Directions

1Heat oven to 200c

2Heat the oil in a pan

3Add the onions and sauté until softened

4Add in the mushrooms and cook for another 4 minutes

5Add in the magic mix and once melted add in a little stock

6Gradually add in more stock whisking all the time

7Add in the mustard and tarragon , mix well

8Stir through the chopped chicken

9FOR A PIE

10Pour this mix into a pie dish

11Top with the pastry, score the top

12Brush with beaten egg and decorate

13Bake for about 20 minutes until the pastry is risen and golden

14FOR A PASTA BAKE

15Par cook 100g of pasta per person

16Stir through the chicken mix , add a little of the pasta water .

17Top with mozerella bake for 15-20 mins

18FOR A PASTA DISH

19Cook 100g pasta per person

20Stir through the chicken and serve

You can add more veg if liked e.g. Peppers , courgettes
