Easy lentil soup

A warming healthy and super easy soup!



1 TBSP oil

6 medium carrots

2 small onions

3 litres of stock - veg or ham

300g red lentils


1Fry off your diced carrots and onions in the oil for a couple of minutes until they've softened a little

2Add your stock and lentils

3Bring to the boil and then reduce heat and simmer for 20 minutes stirring occasionally

4Blend down with a hand blender to desired consistency

5Serve warm with crusty bread
