Egg Fried Rice

 8oz cooked cooled boiled long grain rice
 2 beaten eggs
 2 tblspns toasted sesame oil
 Good splash of vegetable oil
 Couple of handfuls defrosted frozen peas
 4 finely sliced spring onions

Whisk the sesame oil with the eggs in a small bowl

Heat the vegetable oil in a wok

When it is shimmering add the rice and stir fry until it is warm

Add in the peas and spring onions and stir fry for another 2-3 minutes

Push the rice to one side of the wok and add in the egg mix

Let it start to set then work it through the rice

Add a good splash of soy sauce , stir through and serve
