Egg Fried Rice

8oz cooked cooled boiled long grain rice

2 beaten eggs

2 tblspns toasted sesame oil

Good splash of vegetable oil

Couple of handfuls defrosted frozen peas

4 finely sliced spring onions


1Whisk the sesame oil with the eggs in a small bowl

2Heat the vegetable oil in a wok

3When it is shimmering add the rice and stir fry until it is warm

4Add in the peas and spring onions and stir fry for another 2-3 minutes

5Push the rice to one side of the wok and add in the egg mix

6Let it start to set then work it through the rice

7Add a good splash of soy sauce , stir through and serve
