Fish in Crispy Batter

Yields1 Serving

 4 fish fillets ( cod , haddock , river cobbler whatever you have )
 240g plain flour
 3.5 tbspns baking powder
 270ml ice cold water
 Salt and pepper
 Oil or lard for frying

Put the flour and baking powder in a large bowl

Season with salt and pepper

Add the water and mix to form a batter

Keep cold and use within 20 minutes

Heat oven to 150C

Heat the oil in a large saucepan or deep fat fryer to 160C

Dry the fish then season with a little salt and pepper

Dip in the batter

Fry 2 pieces at a time for about 8 minutes until crispy

Drain on kitchen towel , then put in the oven to keep warm while you cook the other pieces
