Fish in Crispy Batter

4 fish fillets ( cod , haddock , river cobbler whatever you have )

240g plain flour

3.5 tbspns baking powder

270ml ice cold water

Salt and pepper

Oil or lard for frying


1Put the flour and baking powder in a large bowl

2Season with salt and pepper

3Add the water and mix to form a batter

4Keep cold and use within 20 minutes

5Heat oven to 150C

6Heat the oil in a large saucepan or deep fat fryer to 160C

7Dry the fish then season with a little salt and pepper

8Dip in the batter

9Fry 2 pieces at a time for about 8 minutes until crispy

10Drain on kitchen towel , then put in the oven to keep warm while you cook the other pieces

11Serve with chips ( recipe on here too ) and peas

12Don't forget to fry up any leftover batter for scraps . To do this dribble the batter in the hot oil and fry until golden
