Fish Traybake

4 fish fillets ( 1 per person )I used salmon the OH had cod

1 head of fennel ( sliced)

500g new potatoes par boiled

2 red peppers chopped

3 shallots halved

6 garlic cloves unpeeled

1 lemon cut into quarters

A good splash of olive or rapeseed oil

Salt and pepper

Half a cooked chorizo sliced

A few asparagus spears

You can add any veg you like ( go freestyle )


1Heat oven to 180C

2Put all veg into a roasting tin

3Squeeze over the juice from 2 of the lemon quarters

4Add the oil

5Season with salt and pepper and toss well

6Put in the oven

7Toss again every 10 minutes

8After 25 mins add the sliced chorizo and mix

9Sit the fish onto of the veg and put in the oven until the fish is cooked

10This will take about 10-15 minutes depending on the size of the fillets

11Serve with crusty bread to mop up the juices
