Fruit Scones

Yields1 Serving
 350g self raising flour
 2tspn baking powder
 75g cold butter
 30g sugar
 100g raisins or sultanas
 Tspn mixed spice
 125 ml milk
 2 beaten eggs

Heat oven to 220c

Put the flour , baking powder and spice in large bowl . Mix well

Add in the butter and rub in with your fingers to a friend me breadcrumb

Mix through the sugar and fruit

Add the milk and nearly all the eggs ( save a little to brush the tops with) bring the mix together , adding a little more milk if needed)

Turn out onto a floured surface , pat down to about 2cm deep. Cut out rounds using a cutter . Put on a lined baking tray . Brush with the remaining egg.

Bake for about 10 minutes until risen and golden . Cool on a wire rack

Serve with butter
