Fruit Scones

350g SR flour

2tspn baking powder

75g cold butter

30g sugar

100g raisins or sultanas

Tspn mixed spice

125 ml milk

2 beaten eggs


1Heat oven to 220c

2Put the flour , baking powder and spice in large bowl . Mix well

3Add in the butter and rub in with your fingers to a friend me breadcrumb

4Mix through the sugar and fruit

5Add the milk and nearly all the eggs ( save a little to brush the tops with) bring the mix together , adding a little more milk if needed)

6Turn out onto a floured surface , pat down to about 2cm deep. Cut out rounds using a cutter . Put on a lined baking tray . Brush with the remaining egg.

7Bake for about 10 minutes until risen and golden . Cool on a wire rack

8Serve with butter
