Guacamole

Ingredients

3 ripe avocados

1 tomato skinned and finely chopped

1 small red onion finely diced

0.5-1 chilli finely chopped or use dried chilli flakes

Salt and pepper

Juice from 1 lime

Some chopped coriander or flat leaf parsley

Directions

1Peel and chop the avacados and put in a bowl . Add the onion , tomato , chilli , salt and pepper and chopped coriander .

2squeeze over the lime juice - taste to check seasoning . Chill before serving

TO SKIN A TOMATO

1Cut a small cross in the bottom of a tomato , pour over boiling water and leave for a couple of minutes. Remove from the boiling water and place in iced water for same length of time . The skin should now peel off easily
