Haddock and sweet corn chowder

Yields4 Servings
 2-3 large leeks roughly sliced
 A big knob of butter
 1 tin of sweet corn
 A handful of chopped thyme
 A couple of bay leaves
 A few black peppercorns
 About 1/2 pt milk
 3 cooked potatoes peeled and cubed
 A couple of haddock fillets
 1pt milk
 A handful of roughly chopped parsley

Melt the butter and add in the leeks and thyme

Cover with a circle of greaseproof paper Put on the lid and cook on a low heat for about 10 minutes

Now add the potatoes and cook for another 10minutes

Put the haddock in a frying pan cover with the milk add the peppercorns and bay leaves

Poach for about 7-10 minutes . Do not over cook !!

Add half of the sweet corn to the leeks and potatoes , stirring well to combine . Now blitz down with a hand lender adding the strained poaching liquor as you go

Flake in the cooked haddock , stir through the remaining sweet corn and the chopped parsley

Bring to a simmer and serve
