Harissa Chicken Traybake

Lovely easy recipe

  • Yields: 4-6 servings


3TBSP Harissa paste

2 TBSP oil

250g natural yoghurt (you can use low fat)

3 large skinless chicken breasts - slashed

1 small butternut squash cut into wedges

2 red onions - quartered

2 peppers - cut into chunks

2 small potatoes - cut into chunks

1 pack baby potatoes

4 corn on the cob


1Mix 2 TBSP of Harissa paste with the yoghurt

2Rub all over the chicken breasts and leave to marinade

3Mix the remaining Harissa with the oil and add to a roasting tin

4Toss the veg and potatoes in the oil / Harissa mix

5Roast for 15 minutes

6Remove from the oven add the chicken and roast for another 20-25 minutes until all the veg and chicken are cooked through
