Easy to make - why not freeze some ?

  • Prep: 10 mins
  • Cook: 5 mins
  • Yields: 4 servings


4 large potatoes microwaved for 10 minutes or oven cooked in jackets

1 onion finely diced

Salt and pepper

Oil for frying


1Put the diced onion in a bowl

2When the potatoes are cool peel off the skin when th your fingers

3Grate the potato into the bowl

4Season with salt and pepper

5Bring together gently in any shape you like

6Heat a little oil in a pan and fry on both sides until golden

Mine fell apart, not sure what I’ve done wrong. Probably lack of oil as was trying to be good.

Entirely up to you but freeze flat on a tray then bag when fully frozen . P
