Hidden veg potato cakes

Ingredients

Leftover mashed potato

Leftover veg

2 eggs, beaten

2 rolls made into breadcrumbs

Directions

1Stick 2 rolls or a couple of slices of bread in the food processor and blitz to crumbs

2Beat your 2 eggs in a bowl

3Purée your leftover veg and mix into your mash

4Form your mix into patty's or balls or croquette shapes

5Dip in the egg

6Roll in the bread crumbs

7Place on a baking tray and put in the oven at GM6 200c for 30 minutes turning halfway through
