Microwave Lemon Curd

The easiest curd recipe

  • Prep: 10 mins
  • Cook: 5 mins
  • Yields: 2 jars

Ingredients

200g caster sugar

3 eggs

250ml freshly squeezedlemon juice

Zest of 3 lemons

100g melted butter

Directions

1Whisk together the caster sugar and eggs in a large microwave safe bowl until smooth.

2Stir in lemon juice, lemon zest and butter.

3Cook in the microwave for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon.

4It's now ready !

5Pour into small sterilised jars. Store for up to three weeks in the fridge.
