Mushroom sauce for steak

20g butter

3 garlic cloves crushed

350g mushrooms sliced use all button or a mixture for a better taste

4 sprigs of thyme

2tblspns red wine or beef stock

80-100ml double cream


1Put the butter , garlic , mushrooms and thyme to a pan . Cook stirring frequently until the mushrooms are tender .

2Add the wine ( or stock ) , cook until the wine has almost evaporated. Remove the thyme sprigs . Add in the cream and cook on a medium low heat until the sauce thickens
