Nigellas Chilli Jam

Lovely with cheese and crackers

Ingredients

150 grams red chilli peppers deseeded and cut into 4 pieces

150 grams red peppers cut into chunks

1 kg jam sugar

600 millilitres cider vinegar

Directions

1Put the chillies into a food processor and pulse until they are finely chopped.

2 Add the chunks of red pepper and pulse again

3Dissolve the sugar in the vinegar in a wide, medium-sized pan over a low heat DO NOT stir

4Scrape the chilli-pepper mixture into the pan.

5Bring the pan to the boil, then leave it at a rolling boil for 10 minutes.

6Take the pan off the heat and allow it cool.

7The liquid will become more syrupy and jelly-like as it cools.

8After about 40 minutes, ladle into your jars.

9 Seal tightly.
