Nomato sauce

A no tomato pasta or pizza sauce

  • Prep: 5 mins
  • Cook: 25 mins
  • Yields: 4 servings

Ingredients

6 carrots sliced

1 beetroot peeled and diced ( wear gloves to do this )

1 large onion, diced

3 celery sticks chopped

2 cloves garlic whole

1 bay leaf

500ml veg stock

Salt and pepper

Directions

1Put everything in a large pan

2Bring to the boil

3Turn down to a simmer until everything is softened

4Remove the bay leaf

5Whizz with a hand blender

6Season with salt and pepper to taste

Add some basil and oregano or Italian mixed herbs if liked

Add apple cider vinegar and lemon juice for some sharpness. Also you can use beetroot powder instead of beetroot and just add at the end for colouring.

I can’t have tomato so I do a huge batch of pumpkin and red pepper sauce every autumn and freeze it in portions. Perfect for pasta, chilli, pizza sauce, and pretty much anything else that would usually have tomato in!
