Nomato sauce

A no tomato pasta or pizza sauce

 6 carrots sliced
 1 beetroot peeled and diced ( wear gloves to do this )
 1 large onion, diced
 3 celery sticks chopped
 2 cloves garlic whole
 1 bay leaf
 500ml veg stock
 Salt and pepper

Put everything in a large pan

Bring to the boil

Turn down to a simmer until everything is softened

Remove the bay leaf

Whizz with a hand blender

Season with salt and pepper to taste

  1. I can’t have tomato so I do a huge batch of pumpkin and red pepper sauce every autumn and freeze it in portions. Perfect for pasta, chilli, pizza sauce, and pretty much anything else that would usually have tomato in!
