Onion Gravy

Goes lovely with sausages

 2 onions thinly sliced
 A little oil
 A knob of butter
 Dash of vinegar
 Salt and pepper
 1 tsp mixed herbs
 1-2 tblspn flour
 1-2 pints vegetable or beef stock ( a cube is ok )
 Dash of Worcestershire sauce or Balsamic vinegar ( optional )

Put the oil and butter in a pan and n a medium heat

Add the onions and cook gently for about 10 minutes

Add the salt , pepper , herbs and vinegar

Cook for another minute or 2

Sprinkle in the flour and mix well with the oil and butter - cook for 2 minutes

Gradually add in the stock - stirring all the time

Add in the Worcestershire sauce or balsamic if using

Let it simmer for at least 10 minutes
