Orange & Mustard Pork Skewers, with couscous.

Ingredients

800g diced pork (serves 8)

Marinate: 3tbsp veg oil, 2 tbsp mustard, 6 tbsp orange juice, 1 tbsp garlic granules, 1 tbsp dried parsely.

400ml vegetable stock

1 tbsp parsley.

300ml Pure orange juice (supermarket value is fine, as is fresh)

2 cups couscous
