Penny2017-12-28T15:57:15+00:00 Total Recipe Views: 21,537 Parsnips Soup By Penny Soup, Vegetable English December 28, 2017 A winter warmer Prep: 20 mins Cook: 35 mins Yields: 4 servings Ingredients 1 chopped onion or leek 4 tblspn butter 1tspn sea salt 1 grated garlic clove 2lbs peeled and chopped parsnips 4 cups chicken or veg stock 2 cups milk Dash of pepper Salt to taste Oil and crispy bacon ( optional ) Directions 1Melt the butter in a large pot over medium heat. 2Add the chopped onion or leek and salt. 3Cook, stirring occasionally until the onion is a bit creamy looking, about 10 minutes. Adjust the heat, if needed, so the onions or leeks cook but don't start to brown). 4 Add the garlic to the pan and cook, stirring, until the garlic is fragrant, about 1 minute. 5Add the parsnips and the stock and bring to a boil. Reduce the heat to a steady simmer and cook until the parsnips are tender to the bite, about 20 minutes. 6Purée the soup until very smooth using a hand blender 7Add the milk and gently heat, stirring occasionally, until nice and hot all the way through.
