 1 chopped onion or leek
 4 tblspn butter
 1tspn sea salt
 1 grated garlic clove
 2lbs peeled and chopped parsnips
 4 cups chicken or veg stock
 2 cups milk
 Dash of pepper
 Salt to taste
 Oil and crispy bacon ( optional )

Melt the butter in a large pot over medium heat.

Add the chopped onion or leek and salt.

Cook, stirring occasionally until the onion is a bit creamy looking, about 10 minutes. Adjust the heat, if needed, so the onions or leeks cook but don't start to brown).

Add the garlic to the pan and cook, stirring, until the garlic is fragrant, about 1 minute.

Add the parsnips and the stock and bring to a boil. Reduce the heat to a steady simmer and cook until the parsnips are tender to the bite, about 20 minutes.

Purée the soup until very smooth using a hand blender

Add the milk and gently heat, stirring occasionally, until nice and hot all the way through. Don’t let it boil

Season to taste and serve

Garnish with a drizzle of oil and crispy bacon shards if liked

  1. I bought 4lbs of parsnips in Asda today for 20p! All chopped, peeled and lightly roasted with garlic – now in the slow cooker with some curry powder then will blend into soup and freeze in portions that will have cost a couple of pennies each.

  2. CURRIED PARSNIP SOUP
    1.5oz butter, 1 med onion, 1.5lb diced parsnips, 1 tsp curry powder, 1/2 tsp cumin, 2.5 pint stock, 5 fl oz single cream

    Fry onion and diced parsnip in butter, add curry powder and cumin. Fry few more mins. Add stock, cook till tender. Blend then add cream. Sprinkle paprika over when serving
