A soup that’s more of a meal

 Oxtail - 1.5kg
 3 carrots, sliced
 1 onion Chopped
 1 parsnip sliced
 2 sticks of chopped celery
 1 turnip ( small and white fleshed NOT a swede ) chopped
 1 tblspn oil
 2 pints beef stock
 0.5-1 cup pearl barley
 2 bay leaves
 Salt and pepper

Put the pot on sauté or meat function

Add the oil

Now add the oxtail and Brown well on all sides

when browned put on a plate

Add the veg and cook for about 5- minutes

Add back the oxtail and resting juices

Add the barley

Add the stock, the bay leaves and season

Switch off the sauté

Put on the lid

Seal

Set to cook on high pressure for 20 minutes

Let the pressure release naturally for about 20-25 minutes
