Pressure Cooked Oxtail,veg and barley broth

A soup that’s more of a meal

  • Yields: 6 -8 servings


Oxtail - 1.5kg

3 carrots, sliced

1 onion Chopped

1 parsnip sliced

2 sticks of chopped celery

1 turnip ( small and white fleshed NOT a swede ) chopped

1 tblspn oil

2 pints beef stock

0.5-1 cup pearl barley

2 bay leaves

Salt and pepper


1Put the pot on sauté or meat function

2Add the oil

3Now add the oxtail and Brown well on all sides

4when browned put on a plate

5Add the veg and cook for about 5- minutes

6Add back the oxtail and resting juices

7Add the barley

8Add the stock, the bay leaves and season

9Switch off the sauté

10Put on the lid


12Set to cook on high pressure for 20 minutes

13Let the pressure release naturally for about 20-25 minutes

14Serve .

Could be cooked in a slow cooker sauté on a hob then slow cook for 6-8 hrs
Cook on the hob for 1.5 hrs
