Roast Potatoes

Peel/chop potatoes

Cover with boiling water from the kettle and put on the hob.

At this point put some oil/fat in a roasting tin and bung it in a hot oven, say 200-220*c

Bring potatoes back to boil. Boil for 7 minutes. Drain

Now, carefully remove your now very hot roasting tin from the oven. Add potatoes. Be careful it may spit/sizzle

Use a brush to cover the potatoes or give it a gentle shake.

*I then shake over a generous shake of dried rosemary and garlic granules - you could add flavour of your choice, or none at all* In the oven for 60-90mins

Give them a jiggle about half way through cooking (at that point get your veggie) Perfect every time.

**TIP** I move mine down the oven for the last 20mins when I pop my Yorkshire's in at the top.
