Use your favourite veg

Ingredients

Pepper

Courgette

Red onion

Cherry tomatoes

Garlic cloves

Mushrooms

Aubergines

Asparagus

Garlic Oil

Salt and pepper

Italian herbs

Directions

1Heat oven to 200c

2Prepare the vegetables so that they're all a similar size

3Put into a bowl

4Season with salt and pepper

5Add the herbs

6Add a good glut of garlic flavoured oil

7Mix with your hands so that everything is well coated

8Place on a baking sheet

9Roast until the vegetables are softened and starting to colour

10Serve
