Ingredients

VINEGRETTE DRESSING ;2 tbls red wine vinegar,2 tspns Dijon mustard, 0.5 tspn sea salt , pepper to taste , up to 0.5 cup olive or rapeseed oil ,

HONEY MUSTARD DRESSING:1 garlic clove minced ,2 tspn Dijon mustard , 2 tspn runny honey ,3 tblspn white wine vinegar,100ml sunflower oil, salt and pepper

BALSAMIC DRESSING: 1 sml minced red onion , 1 tblspn balsamic vinegar,1-2 tspns soft brown sugar,2 tblspns olive oil , salt and pepper to taste

CITRUS DRESSING:zest and juice of a lemon or lime ,zest and juice of an orange ,1 tblspn white wine vinegar, 2 tblspn Dijon or grain mustard,2 tblspn olive or rapeseed oil

THOUSAND ISLAND: pinch sea salt , 1 cup Mayonnaise, 2 tblspns ketchup, 1 tblspn cider vinegar ,2 tspns runny honey , 2 tblspns chopped gherkin or cornichons ,2 tblspns minced onion,

Directions

VINEGRETTE:

1whisk all the ingredients except the oil , gradually whisk in the oil . Or put in a jar and give it a good shake .

BALSAMIC DRESSING:

1combine the onion, vinegar , sugar and seasoning , let it sit for at least one hour , whisk in the oil . Or shake in a jar

CITRUS DRESSING ;

1combine all the ingredients with a whisk or shake in a jar

THOUSAND ISLAND DRESSING :

1stir all the ingredients well to combine

HONEY MUSTARD DRESSING:

1whisk all the ingredients except salt and pepper or shake in a jar . Season to taste

2You can add chopped fresh herbs ,eg tarragon , chives , dill to any dressing
