Slow Cooker Jacket Potatoes

Make more than you need let cool and freeze them

  • Prep: 10 mins
  • Cook: 4 hrs 35 mins
  • Yields: 4

Ingredients

4 baking potatoes mud free and dry

1tblspn rapeseed or olive oil

Tspn sea salt

Aluminium foil

Directions

1Prick the potatoes in several places

2Rub potatoes with olive oil, sprinkle with salt

3Wrap in foil

4Put the potatoes into the slow cooker, put on the lid

5Cook on High for 4 1/2 to 5 hrs

6Cook on Low for 7 1/2 to 8 hrs

These potatoes will not have a crispy skin but a quick flash in a hot oven will sort that

Made this but it only took 3h on high. I’m not sure if different slow cookers have different cooking times but they are delicious.

Do these all the time especially when there are potatoes in the reduced to clear. Always freeze then take one to work for lunch with a filling. Even better when there is yellow sticker coleslaw at 10p thats 2 days lunch sorted
