Super crispy onion rings

Yields1 Serving
 1/2 cup plain flour
 1/4 cup cornflour
 2 tblspn instant mashed potato
 A good pinch of cayenne pepper or paprika
 1 cup of soda water or any fizzy water
 2-3 cups of Panko ( or dried breadcrumbs )
 2-3 onions cut into rings about 1/4 "
 Vegetable oil to fry

Mix the dry ingredients in a large bowl

Add the soda water to make a batter

Let it stand for about 10 minutes

Put the breadcrumbs into a shallow dish

Dip the onion rings into the batter,

Coat in breadcrumbs

7

Heat oil to 170C

Fry the onion rings for 2-3 minutes until golden

9

Drain on kitchen towel

10

Season well and serve
