Thick and chunky vegetable soup

Ingredients

1 large peeled potato, cut into chunks

2 carrots chopped into large chunks

1 large onion cut into wedges

1 green pepper cut into thick chunks

1-2 red peppers cut into large chunks

1 tin of tomatoes

2 garlic cloves , finely sliced or grated

Salt and pepper

1 pint of vegetable stock

Directions

1Put all of the ingredients into a large pan , pressure cooker or slow cooker .

2For a pressure cooker , cook for 12 minutes

3In a pan on the hob cook for about 25-30 minutes

4In a slow cooker cook for about 2 - 4 hours on high

5When cooked remove most of the veg with a slotted spoon

6Whizz up all the potatoes and remaining vegetables to thicken the soup

7Add back the rest of the vegetables

8Check seasoning and serve
