Treacle Pudding

A stick to your ribs pudding

  • Cook: 1 hr 35 mins
  • Yields: 6-8 servings



175g softened butter, plus extra for greasing

3 tblspns golden syrup, plus extra for drizzling

1 tblspn fresh white breadcrumbs

175g golden caster sugar

zest 1 lemon

3 beaten eggs

175g self-raising flour

2 tbsp milk


1Grease a 1-litre pudding basin.

2Mix the golden syrup with the breadcrumbs, tip into the pudding basin.

3Cream the butter , sugar and lemon zest until light and fluffy,

4Gradually add eggs

5Fold in the flour, then finally add the milk if needed

6Spoon into the basin.

7Cover with a double layer of greaseproof and foil making a fold in the centre to let the pudding rise.

8Tie the foil with string, then place in a steamer or large pan on top of an upturned saucer containing enough gently simmering water to come halfway up the sides of the basin. Steam for 1.5 hrs

9. Turn out onto a plate , drizzle more syrup if liked

10To cook in an electric pressure cooker - cook on steam for 25 minutes
