Penny2017-07-09T20:52:54+00:00 Total Recipe Views: 794 Twice Baked Potatoes By Penny Potatoes English May 27, 2015 Ingredients 4 good sized potatoes A good knob of butter 2 egg yolks Salt and pepper 6-8oz grated cheddar cheese 2 tblspn double cream ( optional ) 1-2 tblspns melted butter Directions 1Heat oven to 200C 2Prick potatoes all over 3Put in oven and cook until softened ( about 1 hour ) 4Remove from oven 5Cut tops from the potatoes 6Scoop out the insides into a bowl 7Mash down , add seasoning , cream ( if using ) and egg yolks , mix well 8Mix in the cheese 9Put the top of the potatoes into the empty cavity 10Top with the cheesy mash mix , use a fork to create texture on top 11Put on a baking tray and brush with a little melted butter return to oven for about 20 minutes 12Serve with a salad as a main dish close full screen 00:00
