Apple and Peanut butter Pancakes

Perfect for a filling lunch or as a treat with a cuppa

 100 g Self raising flour
 50 g Sugar
 ¼ tsp Bicarbonate of soda
 60 ml Milk
 1 Egg
 1 Bramley apple
 2 tbsp Peanut butter (crunchy or smooth)
 50 g Pecans(optional)
 4 tbsp Maple syrup(optional)
 1 tsp Oil

Sieve the flour,sugar,bicarbonate into a bowl

Add the egg and half the milk and whisk. Continue whisking as you add a little milk each time till you get a smooth batter.

Grate the apple-pat dry with a paper towel and add into the batter along with the peanut butter and mix well

Put your pan onto a medium heat,add the oil and wipe off with a paper towel

Using a small ladle or soup spoon add your batter to the pan and cook for 2-3mns leaving space between each one as they will spread out a bit

When you see bubbles appear on the surface its time to turn over using a flat turner or spatula

Let them cook for 1-2mns before serving

Serve warm with toasted pecans and maple syrup
Add crispy bacon for a filling breakfast
This will make 12-16 pancakes
