Balsamic chicken with roasted potato slices

You can add any veg you like to this dish

 3 chicken breasts -diced
 A selection of vegetables cut to the same size as the chicken
 3 tblspns balsamic vinegar
 1 tblspn olive or rapeseed oil
 3 large potatoes washed and cut into 1cm discs
 Sea salt
 Black pepper
 A splash of oil

Mix the balsamic and olive oil

Put the chicken and veg in a large bowl .

Pour over the balsamic mix and coat everything well .

Leave to marinate for at least 30 minutes - you could make this and then bag and freeze .

Heat oven to 200c

Put the potatoe slices in a bowl toss in the oil and sea salt and vinegar

Put them in a single layer on a baking sheet and place on top shelf of the oven

After they've been in 15 minutes. Put the chicken and veg in a tray and place under the potatoes

Cook both for 30 minutes , turning the potatoes and chicken once
