Basil Crusted Fish

Yields1 Serving

add the herbs that you like to create this dish

 1 fish fillet per person ( cod , coley , river cobbler )
 8oz homemade breadcrumbs
 Salt and pepper
 Fresh chopped basil ( or whatever herbs you have in )
 Tomato purée
 Spray oil such as 1 cal or canola
 1 lemon cut into 4 wedges

Heat oven to 180C

Par dry the fish with kitchen towel

Mix the breadcrumbs with the seasoning and basil

Spread a little tomato purée on top of each fillet

Top with the breadcrumb mix and pat it on

Spray a baking tray with the oil

Put the fillets on the tray, spray with a little oil

Bake for 20- 25 minutes until fish is just cooked

Serve with a lemon wedge on top of each fillet and vegetables of your choice
