Battered Prawns with Crispy Kale

Find some prawns in the reduced section? Then grab a bag of Kale and you can try this recipe This is a great recipe when you want something a little bit different. You can have it as a main meal, lunch or just a snack. I flatten the Prawns out, as I think it looks better, but you don't have to. It doesn't affect the taste. I've also added some vine tomatoes to the oven along with the kale but again that's optional. If you like a little spice then add some chilli flakes. I've used a shallow pan for frying then finished off in the oven so you dont need too much oil. This feeds 2 but can easily be adjusted to feed 4 by increasing the ingredients.

 120 g King Prawns
 4 tbsp Plain Flour
 4 tbsp Cornflour
 ¼ tsp Baking Powder
 1 Egg yolk
 1 pinch Salt
 1 pinch Sugar
 1 tsp Sesame Oil
 80 ml Iced Water
 Vegetable oil for frying
 300 g Kale
 4 tbsp Virgin Olive Oil
 1 tsp Salt
 2 tsp Brown Sugar

Prep :- Take the Prawns out of the fridge 30mns beforehand. If they have the shell on, then remove but leave the tail on for easy handling.
To get the Prawns long and straight, start by making a few slits underneath in the “belly” of the prawn—three is fine.
This allows the curve of the prawn to spread and flatten.
Heat the oil for frying.
Heat the oven to 180°

Leave the kale in its bag and add the
Olive oil,Salt and Brown sugar.

Fold over the top of the bag and give it all a good shake till everythings coated. Empty the bag onto a baking tray and and put into oven.
Bake at 180' for 15 mins. Give the tray a shake halfway through.
I added some vine tomatoes to the kale too.

For the Prawns:-

Add the flour, cornflour, egg yolk, salt, sugar, baking powder and sesame oil, to a bowl. Mix everything together then add a little iced water to make a smooth paste. Keep stirring and add more water until you get a thick, gloopy batter.

Pat the prawns dry then dip into the batter and then into the hot oil.

Fry for 1-2 minutes, flip them over and fry for a further 1 -2 minutes.
Once they bob to the surface and are golden brown,fish them out using a slotted ladle and drain on some kitchen roll.

Transfer to an oven tray and put in the oven for last 5 mns of your kale crisping up.

Once ready, dress with balsamic glaze and serve hot with crusty bread and a spicy mayo dip.

Tip:- If using an airfryer then add a breadcrumb coating to the prawns as the batter won't stay on during airfrying.
If available, you could use the bake function instead, if you prefer
