Bbq meatballs & rice

An economical speedy dinner

 12 Chicken meatballs-400g
 1 Pkt of microwave rice
 1 Onion
 2 handfuls of peppers
 1 handful of peas
 1 Handful of spinach
 1 pinch Herbs
 1 tbsp Oil
 200 ml Chicken stock
 2 tbsp Tomato puree
 4 tbsp Low sodium soy sauce
 2 tsp Sugar
 1 pinch S&P

Place the meatballs on a tray, drizzle over 1/2 the oil and bake in the oven for 20mns on 200° then set aside

Fry the onions in the remaining oil till soft,add the peppers and stir through

Add the rice and fry for 2-3 mins

Add the tomato puree,soy sauce and sugar to the stock and stir then add to the rice

Add the rest of the ingredients along with the meatballs and simmer for 5-10mns or until the sauce thickens

Season to taste.
Serve with crusty bread

Add some chilli flakes if you want a bit of spice.
Swap the chicken meatballs for beef or pork
Use long grain rice if you have it or arborio rice or even a pkt of savoury rice
