Beef and Chorizo Bake

Yields1 Serving

 500g cooked beef
 2 sliced red onions
 2 red peppers
 1.5 tins chopped tomatoes
 1-2 tspns smoked paprika
 Good pinch of chilli flakes
 A ring of chorizo
 Butter beans optional
 A little oil
 Tblspn tomato purée
 Good pinch of oregano
 2-3 cloves garlic minced

Heat the oil in the pan

Add in the sliced onions and cook for a few minutes , add in the garlic and cook for another minute. Add in the peppers and cook for another 5 minutes

Sprinkle on the paprika and oregano and stir well . Add in the tomatoes , tomato purée and chopped chorizo

Cook for 20 minutes adding more water if needed

Now add in the beef and cook for another 15 minutes

If using beans stir them through the 'stew' and once heated serve

If using raw beef coat in seasoned flour and fry until browned . Fry off the onions , garlic and peppers . Pour in the other ingredients and put in the oven at 170c for 2 hours
