Beef in Red Wine

Yields1 Serving

 500g diced beef
 200g sliced smoked streaky bacon
 300g shallots halved
 125g button mushrooms
 3 garlic cloves crushed
 2 tblspn tomato purée
 500ml red wine
 250ml beef stock
 Bouquet garni - tie some parsley , thyme , bay leaves and rosemary together )
 Seasoned flour
 A little oil
 Salt and pepper

Heat oven to 160c

Put the beef in seasoned flour and coat

Heat a little oil in an ovenproof casserole dish. Fry the now seasoned meat in batches until nicely browned . Leave meat to 1 side

Add the bacon , onions and garlic to the pan and cook till they start to colour . Add in the tomato purée and cook for another few minutes

Add the meat back in along with the wine , stock and bouquet garni ( you can use dried herbs )

Bring to the boil , simmer for 5 minutes then put a lid on the dish and cook in the oven for 3 hours

Remove the bouquet garni before serving .

I served with mustard mash , honey roasted carrots and garlic green beans
