Blackberry Gin

Drink as is or add to a glass of fizz

 900g blackberries
 450g caster sugar
 400ml gin

Place the blackberries and sugar in a large pan and cook down very gently. Stir until the fruit becomes pulpy and the sugar has dissolved.

Pour into a kilner jar and top with gin .

Shake regularly

After a week or two strain through muslin into bottles
