Braised leeks in orange juice

Yields1 Serving

 A knob of butter
 2 leeks
 A few picked thyme leaves
 Juice of 1 orange ( or some orange juice from a carton )
 Zest of 1/4-1/2 an orange

Finely slice or dice your leeks

Melt the butter in a frying pan

Add the leeks and sauté for about 5 minutes

Add the thyme leaves , orange juice and zest

Cover with some damp greaseproof paper

Cook on low until all the liquid is evaporated
