Carrot and Red Lentil Soup

A hearty and warming soup

 1500 g Carrots chopped
 450 g Red Lentils
 3 Onion chopped
 6 Cloves of Garlic chopped
 1 ½ tsp Paprika
 3600 ml Water
 6 stock cubes-1x ham 1x chkn
 6 pinches Chopped Parsley
 3 pinches S & P
 3 tbsp Olive oil

Heat the oil in a large pan and add the Carrots,Onion,Lentils,Garlic and Paprika and stir for 2-3 mins

Add the water and stock cubes and bring to the boil

Lower heat and simmer for 45 mns

Remove from heat and blend till smooth or leave it chunky if you prefer

Serve and garnish with parsley. Season with S & P if needed

Tip- add some plain yoghurt just before serving or drizzle over.
Tip- add more water if needed.
Tip- Squeeze some Lemon juice over for a zesty citrus taste
Tip- using Smoked Paprika will add an extra depth of flavour
