 2lbs of potatoes, peeled
 2 eggs
 3 to 4 oz of strong cheese, grated
 Salt & pepper

Cook the potatoes

Set aside in the colander for 10 minutes

Mash the potatoes, return the pan to hear, add the salt and pepper and mix well

Add eggs and half the cheese, mix well again and stir until potatoes firm up

Once cooled a little form into 24 small balls and roll in the remaining cheese

Place on a greased baking tray and bake in a hot oven for 20 minutes
