Chicken and Chorizo Traybake

Yields1 Serving

 8 chicken pieces ( 4 drum sticks , 4 thighs )
 A chorizo sausage chopped
 800g new potatoes ( cut any large ones in half)
 A red and green pepper cut into chunks
 2 red onions cut into wedges
 200g button mushrooms
 A few cherry tomatoes
 2-3 tbspns oregano
 1-2 tbspns smoked paprika
 2 tbspns Olive or rapeseed oil

Heat oven to 190C

Put chicken and vegetables into a large roasting tray

Pour over the oil

Sprinkle over the oregano ,paprika , salt and pepper

Give it a good mix

Bake for about 40 minutes so the chicken is cooked and crispy

Serve 2 pieces of chicken per person with a selection of the vegetables and drizzled with the oil. Crusty French bread to mop up is good too

You can use whatever vegetables you have in the fridge and adjust seasoning to taste
