Nothing better then soup on a cold night .
Peel and chop all the veg so they roughly the same size and add to a pan along with the stock cubes. How big the pan depends how much veg/ soup you have.
Add enough cold water to cover with about an inch over.
Bring to boil then add the chicken breast (i just added a raw one)
Boil for 10 mins then simmer till chicken is cooked.
Remove any fat that gathers on the top.
Once chicken is cooked take out and shread then return it to pan.
Note.....if you want a thick soup now would be a good time to take half out and blitz the return it all to pan .
